Sweet Potatoes with Stir Fried Veg
1 x large or 2 x small sweet potatoes – oven bake for 30 – 40 mins dependent on size
Once cooked use coconut oil or vegetable-based spread inside them to soften
Pan fry with coconut oil:
Some chopped tofu (fry it until golden)
1 x leek, 5 chopped mushrooms, garlic,1 tbsp harrisa paste
Few spinach leaves
- 1 small chopped avocado
- Some chopped cherry tomatoes
- Some sprouted seeds/beans
- Sunflower seeds
Vegan Shitake Pesto Pasta
Bowl of 'free from' pasta
Sauce: 2-3 tbsp free from Pesto (Sacla brand is good), 2 tbsp tahini mixed in hot water
Fry shitake mushrooms and red onion in pan. Later add garlic, spinach and seeds.
After add grated vegan cheese
Roasted Veggies & Quinoa Bowl
Mix 2 cups of diced vegetables (e.g. sweet potatoes, cauliflower, onion) with 1 tbsp of olive oil and ¼ tsp each of turmeric, coriander, and cumin; add salt and pepper to taste.
Roast with ¾ cup cooked quinoa at 400°F for around 25 mins. If you like, you can add 2 tbsp of toasted coconut.
1 large eggplant. Roast in the oven for 45 mins at about 200 degrees
After it's done, peel the skin off and stick the flesh in a bowl. Mash it up with a potato masher then whisk with a fork.
Add and mix:
1/4 cup tahini, or more if needed
Mince 1 - 3 garlic cloves depending on how much you like garlic, mix those in
1/4 cup fresh lemon juice
1/2 tsp ground cumin
1 pinch of himalayan or celtic salt
Pour on 1 tablespoon extra virgin olive oil
